5 Ingredient Breakfast | Egg White Omelet Muffins


Thursday is the kickoff of Dads, Grads, & Everyone in Between Giveaway Hop!  Forty plus bloggers will have some pretty exciting prizes to giveaway!  If you have not participated in one before you are in for a big treat. Breakfast and Portion Control

Portion control has been hard for me so I whipped up a batch of egg white omelet muffins to help me in the morning.  I know these are all over pinterest but mine are made with GFS frozen egg whites and I used the whole carton and made 30 omelet muffins.  Shopping in bulk is great when you don't have to pay a membership fee! I also don't bother to cook or mix anything first just put it all in the muffin tin as I go and this saves on washing dishes.

How to Make Pretzel Chicken


There are some things that I have learned over the years that I think have made me be an okay mom.  For one, working in restaurants taught me to cook and to be okay with having variety in my menu at home.

Secondly, I learned is that simple recipes are the best recipes. And finally, I learned that if you are going to please a picky eater, don't force anything.

In the case of my son, I will not force him to eat red meat and he will finish his vegetables, all of them.  I feel that is a fair trade off.  Needless to say, I make a whole lot of chicken.  One of his favorites is pretzel chicken.

You will find several varieties of pretzel chicken but mine is what I have used for the last several years and I thought it was clever until I googled it while writing this, I'm not clever, but I am sharing my son's favorite recipe anyway.

Dinner in 5 Ingredients - Crockpot Pork Stir-fry Recipe



Holy crap!  It is crazy cold in OHIO!  Yes, I know - winter and all! but... holy cow!  I am spoiled.  Where I live this is not typical of winter.  Something about where my city sits on the lake that allows for the worse of winter weather to go over, yada yada yada.  Not this year!

Ah well, its not like I will be moving so here is another crockpot recipe I worked out over my holiday - Crockpot Stir-fry!

Seems sacrilegious to make stir-fry in a crockpot but, it is fantastic!  And only five ingredients!  I used a pork tenderloin in mine but chicken would be just as good.

5 Things in My Fridge and a Recipe for Pizza Bread


I am way more embarrassed by what is not in my Frigidaire then what is in my Frigidaire. I would like to show you a picture of a perfect fridge chock full of organic fruits and vegetables and some other high end health food we really can’t afford, but I would have to break into someone else’s house to get that picture.

What I will share of the five things in my fridge are: a stupidly big bag of baby carrots, a few bottles of Slimfast, a bottle of Natalie’s lime juice (to make limeade), leftover pesto with chorizo pasta and pizza bread.

Pizza bread (also called pepperoni bread) is not hard to make per say but it is tedious. You have to make the dough and roll in out, spread out the cheese and roll it up. Despite all of that hard work, it tastes so good and has only five ingredients (if you don’t make the dough from scratch) so it is well worth the effort.

Pizza Bread in 5 Ingredients


  1. Packaged Dough Mix
  2. Mozzarella
  3. Pepperoni
  4. Olive Oil
  5. Pizza Sauce


  • Make the dough as directed and roll it out so it as about ¼ inch thick.
  • Cover the dough with mozzarella and top with pepperoni.
  • Starting at the longest side, roll the dough until it is a loaf and pinch the ends.
  • Drizzle olive oil on top and gently rub it over the loaf. (you can top the oil with basil if so desired or and Italian blend). Slice a few air vents on the top.
  • Bake for 25 minutes at 350 degrees or until the top is brown.
  • Serve with marinara or pizza sauce on the side for dipping.




And of course, while you are making your dinner the kids can make theirs...

How Steak Bruschetta Saved My Marriage (and the recipe for you)


Okay, maybe steak bruschetta did not actually save my marriage, but it certainly helped when I attempted to make the whole family healthier and went on a baked chicken and steamed veggies kick.

On the fifth day, the Husband threatened divorce if he had another bite of chicken. And, by day seven I believed him and thought I should make a good old-fashioned steak and potatoes meal before he made good on his threat.

As I looked through the freezer I found minute steaks, but since I was going without carbs the potato bin was empty. Luckily, I found a box of stuffing, a recipe on the back for Bruschetta Steak, and I had all the ingredients!

Bruschetta Steak in Five Ingredients

  1. Steak
  2. Stuffing
  3. Canned tomatoes
  4. Mozzarella
  5. Basil



  • Brown steaks on medium to high heat in olive oil
  • For the stuffing: mix one cup of stuffing with one can of tomatoes, water and all, plus 1/2 a cup of water. The mixture should be just barely moist. 
  • Add basil and about a handful of mozzarella to the stuffing mixture then spoon the mixture on top of the steaks. 
  • Cover the steaks and stuffing with mozzarella and cover the pan to cook until the cheese is melted.

Dinner in Five Ingredients - Skillet Steak and Rice



Occasionally I feel more like a short order cook then a mom who cooks.
  It has been a busy summer and I find myself scrambling to make dinner out of nothing in no time.  This can either be a brilliant culinary accomplishment or utter failure resulting in take-out. 

As I was making dinner tonight, I realized that some of my most successful meals are ones that are simple and only have about five ingredients.  And by ingredients I mean, anything that comes in one package.  Sure I can cut up three different types of peppers and onions or I can grab a bag of it already chopped and ready to go into the pan.  Also, I don't count salt and pepper as an ingredient nor do I count water or oil.

This recipe is inspired by pepper steak and steak and peppers.  You would think they would be the same dish and maybe they are but in my version I use Heinz 57 (this is not a post for Heinz 57, I just really like it) instead of soy sauce.  I also season it pretty heavy with pepper because it is just the best damn season in the whole universe.

Skillet Steak in 5 Ingredients


  1. 1 lb Top Round Steak
  2. 2 bags of frozen pepper steak stir fry mix (or any type of stir fry mix you like)
  3. 3 cups brown rice (made to the box instructions with butter)
  4. 1/2 cup Heinz 57 Steak Sauce

Cut the round steak into strips and marinate in Heinz 57 sauce and water.  Use just enough water to cover the steak.  The length of time does not matter - 10 minutes or over night it's up to you.

When you are ready to cook - add oil and heat skillet.  Once oil is hot add steak and about 1/4 cup of the marinade; saute.  Save the marinade and use it to make your rice.

Once the meat is cooked add your frozen veggies, stir, cover and let simmer for 15 minutes.

Server over the brown rice.
